Everything was done by hand: they started by cutting off the top, then, holding a knife by the tip of the blade with the handle pointing upwards, they scraped the cheese into shavings known as " rosettes " over the edge of the wheel.

Our visit started with the little museum on the first floor.It was interesting to see, for example, how the posters advertising the cheese had changed over the years and the various types of girolle cheese cutters, the grating tool.
We then watched a film tracing the history of Tête de Moine before going into the old cellar, and seeing the cauldron used to make the cheese.

Wir starteten im kleinen Museum im ersten Stock, wo wir Interessantes über die Entwicklung der Plakatwerbung von Käse und über die verschiedenen Schabgeräte, die Girolles, erfuhren.
Danach sahen wir einen Film über die Geschichte des Tête de Moine, bevor wir in den alten Keller stiegen, wo sich der alte Kessel für die Käseherstellung befindet.
