Dazu wird aus einem apathogenen Bakterium, das aus dem Polarmeer isoliert wurde, ein Chitinase Enzym-System durch spezifische Fermentation gewonnen, charakterisiert und für spezielle Applikationen zur Konservierung verschiedener Lebensmittel geprüft.
